Trying to think of ways of using all those mushrooms after a big harvest? Here is 5 quick and easy ways of preserving mushrooms so you don't have to eat them all at once!

Thai Oyster Mushrooms & Coconut Soup

Mmmm...Thai Oyster Mushroom and Coconut Soup on a winter day. Perfect. This hearty dish has sweet, creamy coconut milk, spicy Thai red curry paste, fleshy 'meaty' oyster mushrooms, and freshly squeezed lime/lemon juice and fish sauce added just before serving. If you can get wood-ear mushrooms in season they add a lovely crunchy texture. This recipe can be vegan if you swap out the stock and fish sauce for vegan equivalent.

Kale and Oyster Mushroom Lasagne

Mmmm…warming lasagne in the cooler months. A bit longer to prepare, but worth it for a hearty meal. You can swap out the kale for a mixture of other greens if you wish. If you are vegan, just swap out the dairy ingredients listed below (vegan substitutes are noted). Serve with a zingy salad, stir fry veges, or roast veges.

You can also swap red for green and use a green curry paste and green chillies if you wish. Serve on steamed rice.
