Vegan Creamy Mushroom Stew

This dish is quick and easy. The garlic and white wine elevate the flavours to make this a rich and silky smooth stew. Great for plant-based and meat-eaters alike.

Ingredients

400 g mixture of grey and pink oyster mushrooms
2 tbsp. olive oil
75 ml white wine
4 cloves of garlic
black pepper
200 ml non-dairy cream (almond or oat creams work well)
1 tsp smoked paprika
Fresh herbs finely chopped (optional)

Instructions

Slice the mushrooms and garlic and sauté in 2 tbsp. of olive oil on medium heat.
Add the white wine, salt and pepper. Allow reducing for a couple of minutes.
Add the non-dairy cream and smoked paprika. Allow reducing on medium heat until the sauce thickens.
Serve with rice or potatoes, sprinkle with herbs if you wish.
