A unique taste sensation from our fermentation kitchen in Ohau. A ferment that brings together the incredibly aromatic Quince with the exotic flavour and health properties of cinnamon, white pepper & a dash of cardamom. Loaded with healthy pre and probiotics. It’s incredibly active, as we use 3 different Lactobacillus varieties.
Tasting Notes
This ferment has a fresh & firm texture that is packed with gut-healthy fibre. The aromatic qualities & tartness of the quince shine through. The cinnamon & pepper add a delicate punch that does not overwhelm and complements the Quince in a most delectable way. It is a well-balanced ferment with a rich array of delicate flavours and textures. This means it plays well with either sweet or savoury dishes.
How people have been using it
Try it on vanilla ice cream – even better with some hokey-pokey. It’s divine paired with dark chocolate or self-saucing chocolate pudding. It also pairs well with cheese-based dishes or platters, plain yoghurt on top of muesli, or on a bowl of oats.
It pairs well with fish, lamb, venison, or beef. You can stir it through potato or kumara mash, or serve it with roasts, either plant-based or meat-based. Use it as a rub on meats – the high acidity will act as a tenderiser – or simply spread it on toast!

The quality of the fruit
This beautifully textured and aromatic ferment celebrates Quince, picked and preserved at the peak of its season from our little orchard in Ohau. We use zero chemicals, so you can be assured it’s 100% natural.
Most of this season’s harvest will be used for this product. We only have two trees that produce about 50kg of fruit between them, which will make approximately 500 jars – a very limited supply.
Why Quince?
For several years, we’ve been using quince to make membrillo and a delicious quince wine. However, we thought it would also work well as a spicy lacto-ferment. It was well worth the effort to get this recipe right, and we’re sure you’ll be as delighted as we are.
This product is Vegan and contains no Gluten or dairy.

- Sustainable: We are a small-scale grower and food producer with a focus on local and niche markets. As a business, wherever possible we use recycled materials and aim for zero waste. All of our processes, from growing to making food, require low energy and water consumption. Zero chemicals or sprays are used. We use permaculture principles to care for the land that we are entrusted to maintain for future generations.
- Ethical: No animals are harmed in the making of our food. We ensure that our ingredients are ethically sourced. Whenever possible we buy and support other local growers.
- Natural: Although we are not certified organic, we use organic principles just the same. We use natural processes to grow our mushrooms and natural processes to make our food. This is why we favour fermentation as our main production method.
- Nutritious: We are firm believers in functional food, with health and nutrition coming from the food we eat rather than from supplements or medicines. You can be assured that everything we make and sell is healthy. Any process we use to make food not only makes it taste even better but also increases the health or nutritional benefits.
We know that we cannot produce enough volume to feed the planet, so have focused our production on people that appreciate high-quality food that is packed to the gunnel with health and flavour.
