Ingredients
- 350g potatoes or kumera
- 1 Tbsp oil
- 200g oyster mushrooms (grey or pink, or mixture)
- 2 cloves garlic
- 100g spinach
- 4 Tbsp cheese (cheddar, feta, or goat)
- 2 eggs
- Salt and pepper to taste
- Fresh chilli or dried chilli flakes to taste
Instructions
- Heat oven to 220C. Cut potatoes/kumera into 2-3cm chunks. Put in a large ovenproof frying pan, season and drizzle with oil. Roast for around 15mins.
- Cut or tear mushrooms into large pieces, chop the garlic, then toss through the potatoes/kumera (aka sweet potatoes). Roast for 10 mins until potatoes are tender. Remove from oven, stir in spinach until wilted.
- Grate or crumble in the cheese, then using a spoon make 2 hollows in the vegetables. Crack the eggs into the hollows, season with salt and pepper and chilli, and return to oven for 6-8 minutes until eggs are set.
