We do not grow on logs because it’s a very slow process, with a lower success rate. Instead, we use a combination of oak and pine sawdust, plus some wheat bran for added nutrition. This sawdust is certified organic and strangely it’s also food-grade!
As the shiitake mycelium colonises the substrate it binds the loose sawdust into a fairly solid block and gains a texture similar to cork.
